Kofta Curry

INGREDIENTS

Kofta

  • 1 lb ground beef
  • 1/2 cup diced onions
  • 2 cloves of garlic minced 
  • 1/2 tbs grated ginger
  • 1/4 cup chopped cilantro
  • 1 tsp garam masala
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp paprika
  • 1 tsp salt

Curry

  • 2 bay leaves
  • 1 cinnamon stick
  • 2 cardamom seeds
  • 1 cup chopped onion
  • 4 cloves garlic minced
  • 1 tbs grated ginger
  • 1 tsp garam masala
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • 1 tsp spicy paprica
  • 2 beefsteak tomatoes
  • 1 cup water
  • salt to taste
  • cilantro to garnis

STEPS

  1. Mix all the kofta ingredients together in a bowl. Form into equal size balls.
  2. Heat a dutch oven with 3 tablespoon of oil. Working in batches, brown all sides of the meatballs. Don’t crowd your pot. Set aside.
  3. Use the same pot, add bay leaves, cinnamon and cardamoms. Cook for 1 min.
  4. Add onions, garlic and ginger. Season with 1 tsp salt and cook until translucent.
  5. Add garam masala. cumin, coriander, turmeric and paprika. Let cook for 2 mins.
  6. Mix in tomatoes. Cover and lower heat to medium. Let simmer for 20 mins until tomatoes are soft. Stir every 5 mins.
  7. Add 1 cup of water, season with salt and then add meatballs.
  8. Let everything cook together uncovered for another 20 mins.
  9. Garnish with cilantro. Enjoy served with rice or naan.
